Mercer 2014 Cabernet Sauvignon
Individual vineyard lots of Cabernet Sauvignon were fermented separately and barrel aged in a combination of French and American oak for 17 months. A warm vintage gave us ripe Cabernet Sauvignon with aromas of ripe black fruit and a hint of cassis. The voluminous fruit carries through the mouth. Barrel aging the wine adds hints of warm spices and aids in the depth and complexity. Powdery tannins gives structure to the wine while maintaining an elegant, balanced mouth feel. This Cabernet Sauvignon shows great expression of the terroir of the Horse Heaven Hills AVA.

DAOU 2015 Cabernet Sauvignon
Rich deep dark berry color with creamy mocha-espresso flavors is the first impression of this wine. The tannins are well integrated with the fruit and create a long finish that keeps going. It’s full bodied with a saturated finish while accompanied by bright acidity and infused by black current and cooked blueberry fruit. Balanced and intense, it showcases what Bordeaux varieties can perform when managed correctly.

Our 2015 Aviary California Cabernet Sauvignon is deep ruby in color open- ing big with aromas of red fruit, vanilla, and black pepper, followed by soft notes of cherry cola, spice, bay leaf, maple syrup, and sweet cedar. J Wilkes 2014 Cabernet Sauvignon
Our Cabernet Sauvignon is Plush and enticing with currant/cassis, blackberry, ripe cherries dusted with baking chocolates, all supported by echoes of oak toast, vanilla, wet slate/mineral, baking spice, faintest suggestion of eucalyptus/mint. Ripe and bold on the attach with full – bodied Cabernet character one expects from Paso Robles (mouth-coating black berry fruits, cocoa, ripe cherries and spice-lad-en cassis, but also a sense of restraint rarely found in Cabs bearing a Paso AVA.

J Wilkes 2015 Pinot Noir Santa Maria Valley
This Pinot Noir has ripe red berry fruits, cherry pie, Kola nut, white pepper, clove and an intense earthy/ spicy/ savory/meaty complexity that reminds me of great, young Burgundy wine. Bright, fruity, balanced and quite complex for such a juicy youngster . Light, loamy tannins add structure to the light acidity, giving palate-cleansing character that will improve almost any food that can be put on a plate or in a bowl. Persistent finish shows cherry/ rhubarb/ loamy earthy tannins that are more prevalent than I am used to in youthful SMV Pinot Noir. This youthful wine speaks volumes about the future of Santa Maria Pinot Noir typicity and gives the Sta. Rita Hills a moment of worrisome reflection. Delicious and complex now, but I prefer my pinots to lose a little baby fat before consumption, which will likely take 5-7 years. Can the wine go 10 years+? History of the vineyards used would say absolutely, but it’ s always better to drink a wine on the way up, so I will suggest 3-7 years of age on this if you prefer a little more earthy character . Decanting / aerating suggested through 2021.
